Thai Kitchen Review!

Thai Kitchen was a great company to review because I am actually part Thai:) They generously sent me four of their staple ingredients: Jasmine Rice, Fish Sauce, Coconut Milk, and Red Curry Paste to demonstrate to my readers how to create delicious Thai meals! 

For lunch last Saturday, we made Coconut Chicken Soup. It is a simple recipe which even picky eaters will enjoy:)  Coconut Chicken is great for hectic nights, and makes good leftovers, too! My whole family enjoys this recipe, and I’m sure yours will too…
                                    Here is the recipe:
                     Thai Kitchen Chicken Coconut Soup

                                     Prep. Time: 15 min.
                                    Cook Time: 15 min.
                                   Makes 6 servings.
1 tbsp. vegetable oil
1 lb. boneless skinless chicken breasts, cut into thin strips
3 cups Thai Kitchen Coconut Milk
2 cups water
¼ cup Thai Premium Fish Sauce
¼ cup fresh lime juice
2 tbsp. minced ginger
¼ tsp. ground red pepper
2 tbsp. thinly sliced green onion
1 tbsp. chopped fresh cilantro
(Note: The last three ingredients can be optional.)

Heat oil in large saucepan on medium heat. Add chicken; stir fry 3 min. or until chicken is cooked through. Stir in Coconut milk and water. Bring to boil; reduce heat to low.
Stir in Fish Sauce, lime juice, ginger, and red pepper. Simmer 10 min., stirring occasionally.
To serve, ladle into soup bowls. Garnish with green onion and cilantro. Enjoy!
